Quiche Cups
POINTS® value: 2
Servings: 10
Ingredients:
3 oz fat-free cream cheese
2/3 cup fat-free sour cream
1/2 cup Egg Beaters Southwestern, refrigerated
1/2 cup low-fat Swiss cheese
4 slices reduced fat uncooked bacon
2 tbsp sweet red pepper/s
1 roll of Pillsbury Grands! Homestyle Reduced-Fat Buttermilk Biscuit/s
1/4 tsp ground oregano
Instructions:
In a mixing bowl, beat cream cheese and sour cream until smooth. Add eggs; mix. Stir in swiss cheese, bacon, red pepper, and oregano. set aside. Separate dough into 10 biscuits; flatten into 5 inch circles; Press into the bottom and sides of a greased muffin cup. Divide the egg mixture among biscuit lined cups. About 2 Tablespoons per biscuit.
Bake at 375 for 18-20 minutes or until a knife inserted comes out clean. let stand 5 minutes before removing and serving. |
